Yesterday, I feasted. I’m totally fine with the fact that I ate something that I hadn’t had in AGES — my wonderful fried apples.
Breakfast:
- 3 slices thick-sliced bacon
Lunch:
- chicken breast stir-fried in ghee/coconut oil with stir-fry veggies (pea pods, red peppers, mushrooms, carrot, green beans, etc.)
Dinner:
- Roast Meatloaf
- mashed cauliflower
- fried apples (apples fried in coconut oil and ghee with TONS of cinnamon)
Have you ever tried binding a meatloaf with quinoa? I just saw a recipe yesterday on AllRecipes for a turkey quinoa meatloaf and am thinking about trying it. Would be gluten-free, but I’m not sure how low carb. Quinoa’s pretty high protein though.
No, I haven’t tried quinoa. I’ve only used coconut flour, flaxseed meal, or egg/parmesan cheese as binders. Well, I guess I’ve used oats too, but that isn’t relevant to me right now. The coconut flour gave me the best results for a dairy-free option.
