Yesterday’s Menu (10/02/11)

Yesterday’s menu was filled with so much variety.  I was having a blast making good food for my family, and I loved seeing my kids’ enthusiasm about trying new foods.

Breakfast:

Lunch:

  • egg scramble skillet made with bacon, spinach, mushrooms, tomato, onions, and dried Italian seasoning
  • coffee with coconut milk

Snack:

  • roasted almonds with sea salt
  • smoothie made with frozen mixed berries, coconut milk, almond milk, and stevia

Dinner:

  • My Favorite Meatballs made with 1/4 c coconut flour instead of the requisite parmesan cheese
  • zucchini “noodles” cooked in ghee and garlic
  • coconut flour “brownie” (which came out more like a dry cookie, so we put melted butter on top of them to add some moisture)
