Yesterday’s menu was filled with so much variety. I was having a blast making good food for my family, and I loved seeing my kids’ enthusiasm about trying new foods.
Breakfast:
- Pumpkin Walnut Muffin with butter
- black coffee
Lunch:
- egg scramble skillet made with bacon, spinach, mushrooms, tomato, onions, and dried Italian seasoning
- coffee with coconut milk
Snack:
- roasted almonds with sea salt
- smoothie made with frozen mixed berries, coconut milk, almond milk, and stevia
Dinner:
- My Favorite Meatballs made with 1/4 c coconut flour instead of the requisite parmesan cheese
- zucchini “noodles” cooked in ghee and garlic
- coconut flour “brownie” (which came out more like a dry cookie, so we put melted butter on top of them to add some moisture)
