Zingy Egg Salad

I really enjoy this egg salad recipe.  It’s great plain or served in a raw bell pepper half.

Ingredients:

  • 8 hard-boiled eggs, chopped
  • 1/4 c spicy mustard
  • 1/2 c mayonnaise
  • stevia equivalent to 1 T sugar
  • 1/2 t garlic salt
  • 1/2 c finely chopped onion

Procedure:

  1. In a medium bowl, combine mustard, mayonnaise, stevia, and garlic salt.
  2. Fold eggs and onion into mayonnaise mixture.  Cover and refrigerate.  This recipe tastes best when the flavors have been allowed to blend for at least 4 hours.

    sounds good… will have to try it. Egg salad is also good with some curry powder

  2. I’ve never tried it with curry powder, but I bet it’d be great!
