Today’s Menu (11/05/11)

So far, so good for the “add more calories and veggies” campaign.  I certainly won’t be counting chickens before they’re hatched though.

I do have to say though that it’s tough eating all this food.  It’s really strange to go from eating too much food and never feeling full to eating not enough food and never feeling hungry.

Breakfast:

  • 3 large chicken thighs

Lunch:

  • canned pumpkin with egg, coconut oil, and cinnamon
  • mashed cauliflower

Dinner:

  • 80% lean ground beef with broccoli

According to Fitday:

  • Calories: 1998
  • Fat: 140.2g (62%)
  • Carbs: 50.1g (9%)
  • Fiber: 23.3g
  • Protein: 143g (29%)

Some vitals from this morning:

  • Weight: 255.4 lb (a new low)
  • Blood Pressure: 103/65

    Did you cook the pumpkin?

    • Yes, I cooked the pumpkin, but I’m sure most folks wouldn’t have liked what I did. I’ll do it again in the future if I’m desperate for some veggie carbs, but it wasn’t anything awe-inspiring! :) I took about a cup of pumpkin, mixed it with 2 eggs, 3T half & half, stevia, 2T coconut oil, and 1/2t pumpkin pie spice. I microwaved it for a minute, then stirred, then repeated a few more times. The eggs got a little scrambled, and I didn’t make it too sweet (on purpose). It fit the bill for what I was trying though (veggie carbs and a vehicle to get some coconut oil in me.)
