Microwave Chocolate “Cake”

This recipe is my take on a Peanut Butter & Chocolate Brownie Treat recipe which can be found at one of my favorite low-carb recipe sites, http://www.genaw.com/lowcarb/index.html.

Ingredients:

  • 1 T almond butter
  • 1 T butter
  • 4 T (2 oz) cream cheese
  • 1 egg
  • 1 T unsweetened cocoa powder
  • a pinch of cinnamon
  • 1/2 t pure vanilla extract
  • stevia equivalent to 3 T sugar, or to taste

Procedure:

  1. Place almond butter, butter, and cream cheese into a microwave-safe custard dish or mug.  Heat on high for 30 seconds.  Stir until ingredients are well-blended.
  2. Add remaining ingredients and blend with a fork until batter is smooth.  Microwave on high an addition 1:15-1:30.  Turn “cake” out onto plate and allow to cool before enjoying.
