This recipe is my take on a Peanut Butter & Chocolate Brownie Treat recipe which can be found at one of my favorite low-carb recipe sites, http://www.genaw.com/lowcarb/index.html.
Ingredients:
- 1 T almond butter
- 1 T butter
- 4 T (2 oz) cream cheese
- 1 egg
- 1 T unsweetened cocoa powder
- a pinch of cinnamon
- 1/2 t pure vanilla extract
- stevia equivalent to 3 T sugar, or to taste
Procedure:
- Place almond butter, butter, and cream cheese into a microwave-safe custard dish or mug. Heat on high for 30 seconds. Stir until ingredients are well-blended.
- Add remaining ingredients and blend with a fork until batter is smooth. Microwave on high an addition 1:15-1:30. Turn “cake” out onto plate and allow to cool before enjoying.
